Hi Richard,
Zen and controlling one's thoughts: I don't think
the controlling part happens the way we westerner's would
describe controlling. That is, one isn't aware that
one is controlling the anger.
What seems to happen (at least in my own experience
with years of meditation---I had a hot temper, by the
way, and tried to find a way to 'control' it) is that
with just the simple act of sitting and following the
breath over and over again, gradually, the control
happens in a very, very gentle way.
This manifests itself outwardly in that maybe in
a few months after daily meditating for 1 hour a day,
one simply doesn't have the same triggers. Instead
something else replaces it that can only be described
as 'patience' and/or compassion. But it's not a feeling
not an emotion. It's just THERE.
So someone could be yelling in your face over something
you did NOT do and you can perfectly stand there and wait
politely until they're finished to talk with them....or
to simply walk away after, perhaps smiling at them or
touching their arm compassionately (walk away because
they are too heated to really talk rationally).
That's how I found it to be. Now I still have MUCH
work on it, tho, to do. But I have also noticed that
if I skip my daily meditation, soon the ability to
navigate a tempestuous situation, calmly, disappeares some.
So it has to be maintained, daily.

Hugs,
Adele
